Comforting veggie pasta

This is a great easy recipe of comforting pasta for cold days, when the body is asking for something warm and substantial, to eat wrapped up in a blanket and watching a good movie. I did it recently when I was ill and could not stop eating it. It is highly addictive .

For 2 servings, you will need:

  • 250 grams wholewheat pasta (or any kind you would like)
  • 1 aubergine
  • 1 zucchini
  • 20 cl tomato passata
  • 1 clove garlic
  • 75 grams feta cheese
  • 1 cup baby spinach
  • 4-5 leaves basil
  • 3 tablespoons olive oil
  • salt and pepper to taste

Start by heating the oil in a deep frying pan. Chop the garlic and add it to cook until softened. Chop the aubergine into bite-size cubes and slice the zucchini into quarters. Add them into the pan and cook until tender and slightly browned on one side. Then add the passata, salt and pepper, and cook for additional 5 minutes. Crumble the feta with your hands, chop the basil leaves, and add them together with the spinach, just before removing the pan from the heat.

In the meantime, cook the pasta per its instructions. Once done (al dente please), mix it in the sauce.

Et voilà! It’s yummy.
