Energy ball mania #5: Cinnamon coats walnut

Yes, yes, it does not stop. It’s a mania I tell you. And it’s very much encouraged by a real appreciation by my colleagues. They are my energy ball testers, and I am ever grateful to them.

These ones were inspired from an Instagram post by @veganne_. I loooove cinnamon (have you ever sprinkled it on your latte? I do it every day. It’s supposed to lower blood sugar levels and there is diabetes in my family), so when I saw them, I had to make them. The recipe was not given, so I threw in a few ingredients to try to recreate the little beauties.

For some 8-10 balls, you will need:

  • 100 grams date paste (or dates, after taking out the seeds)
  • 75 grams walnuts
  • 1 tablespoon unsweetened almond milk
  • 1 tablespoon cinnamon

Blend all the ingredients together in a kitchen blender until almost smooth. Make small balls with your hands and roll in something you like! I used pollen. I know it’s not vegan, but I still have some at home from earlier days, and I thought it would add a nice contrast, all the while being super healthy (it’s antibacterial, antifungal and antiviral agent that strengthens the capillaries, reduces inflammation, stimulates the immune system and lowers cholesterol levels – all that!).

These balls are not too sweet, so if you like them sweeter, add a teeny more date paste.
