Energy ball mania #8: Sleepless Baci balls (coffee meets hazelnut)

All variations are good for raw energy balls and I am in constant search of new combinations! So, as I am a true coffee maniac (among other things ), I needed to have a recipe for my preferred sweet snack with a coffee twist. And here it is!

This recipe is similar to my early experiments (removed from this blog to leave place for better stuff, I say with all my modesty ), but these are here cos, they are – well – more special to the coffee fan that I am.

So, for about 14 balls, you will need:

  • 1 cup hazelnuts
  • 100 grams date paste
  • 1/2 cup shredded coconut (and some additional for rolling)
  • 1 tablespoon melted coconut oil
  • 2 teaspoons instant coffee
  • About 14 roasted hazelnuts

Start by grinding the hazelnuts in a food processor, until they become powdery.  In a small dish or cup, mix the coffee with 1 teaspoon water, just so that it melts. Add all the ingredients, including the coffee but excluding the roasted hazelnuts, to the blended hazelnuts, and combine it all together until you get a sticky dough.

For each ball, take one roasted hazelnut and form a small ball around it by sticking the dough well (this is the twist inspired by the famous Italian Perugina Baci chocolates – which I looooovvvvvveeeee, but which are not vegan at all ). Of course, you can do the balls also without the hazelnut inside.

In the end, roll the balls in some shredded coconut. To get some extra coffee flavour, what I did was soak the coconut in the remaining drops of coffee (I told you I was sort of a coffee maniac right?).

Et voilà! Only, pay attention not to eat these just before going to bed – sleepless night guaranteed!
