I have always looked for the perfect pancake recipe, and, for the time being, this seems to be it! I was looking for one that won’t necessarily have bananas in it, since I don’t always have them at home and, also, sometimes one wants not to have that banana taste from the very beginning, right? (Bananas can be added as a toping, for whoever likes, afterwards…). My man loved these and I loved these … So, we can’t both be wrong, right?
This recipe is slightly tweaked from the Hungry Warrior.
So, for some 6 to 8 pancakes, you will need:
- 1 cup 5-cereals or whole spelt flour
- 1 cup oat milk
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla powder
- Pinch of salt
- Tiny bit of coconut oil
Put all the ingredients in a large bowl and mix them well until they form a smooth batter.
I have a pancake and waffle maker, so that is what I used, since it is very easy. BUT if you don’t heve it: Start by greasing a preheated non stick pan with coconut oil. Pour a large spoon-full of batter (you can shape the pancakes by using greased rings that you can fill). Once bubbles form (remove the ring and) flip the pancake to cook for another minute or two.
Et voilà! Serve with maple syrup, cinnamon and berries. This will make your Sunday, I promise!
