Energy ball mania #3: Tahini’s nuts for the coconuts
It is episode 3 in the series. I can’t get enough of the little power balls, so any time I find a new recipe for inspiration, I have to make them. I only don’t like sultanas as dried fruits, but anything else goes !
These babies are really really, I mean, really, really, seriously yummy. I had a bad sugar craving yesterday at midnight, so I dug into these. They are so packed with energy, that I did not need more than two (believe me, if I get sugar cravings, it can be much worse than that).
So, to make a batch of 10, here is what you need:
- 75 grams dried figs
- 75 grams cashew nuts
- 40 grams shredded coconut
- 2 tablespoons tahini
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- a pinch salt
- some sesame seeds to roll them in
Mix all the ingredients together in a food processor until it blends well. With wet hands, shape 10 tennis-table-size balls. Roll them in the sesame seeds for decoration and store them in the fridge for some 15 minutes.
Et voilà! You can enjoy them during the whole week!
