Energy ball mania #6: Raw lime this time (with rhyme)

How far do you think the energy ball mania will go? Up to which #? I think it is likely to become a double digit number!! Yikes !!!

These are the (temporary) winner of a little survey I did among friends and colleagues, offering them a choice between two kinds. (I won’t tell you which one the second one was, cos it is likely it will also end up on these pages, as opinions were quite split.)

Slightly adapted from Sproutly Stories, these are a bit surprising cos they are quite refreshing and not too sweet. The lime and the coconut give them a nice exotic taste. And this is exactly what I need right now, in the middle of the gray Parisian winter.

So, for a batch of 12-15 balls, you will need:

  • 1/2 cup rolled oats
  • 1/2 cup cashews
  • 80 grams date paste (or 5 medjool dates, pitted)
  • 1 tablespoon tahini
  • juice and zest of 1 lime
  • 1/4 cup desiccated coconut (and some extra to roll in)

Place all the ingredients in a kitchen blender and blend until the cashews are in tiny pieces (they are the toughest to blend in this combo). It should take some 5 minutes tops. Make small balls with your hands, and roll in the coconut.
