The-peanut-energizes-the-oat energy balls
Well, it simply does not get easier than this. IF you need an energizing, healthy and a sweet-but-not-unhealthy snack, AND if on top of that you are a peanut-butter addict (I am getting there), AND if you are at that time of the Week or the day that you are feeling lazy and you want to go very simple in the kitchen and not use any appliance whatsoever – THEN look no further. These babies are for you and for you only. In terms of simplicity and time management, think of this recipe as the salad equivalent for a dessert or snack.
Convinced? Good. So, for some 12 balls, you will need:
- 1/2 cup peanut butter (you can also other butters that you may prefer)
- 1/4 cup maple syrup
- 1/2 tablespoon flaxseed meal (i.e. ground flaxeeds)
- 1 1/4 cup rolled oats
- 2 tablespoons chia seeds
- 1/4 cup superfood mix (I always have in my pantry a mix of dried mulberies, cranberries and goji berries)
I am very tempted to leave this space empty, cos there is nothing to do . Just mix all the ingredients together in a bowl, scoop the mix with your hands or with a spoon to make small ping-pong-size balls, and that’s it! Store in the freezer or the fridge.
Et voila! Too easy, right?
