Matcha meets pistachio

Nope, it’s not over yet (and there is plenty more to come – yikes!) . I love matcha and, in feeding my raw energy ball mania, I am trying to find a recipe with a fine balance between preserving the specificity of the taste and the bitterness that matcha can easily give. I think this recipe achieves it (I think better than the Energy ball mania #4), but hey, it’s for you to judge ! Also, as I am trying to vary the energy balls with new ingredients all the time, these have one that I have not yet used – pistachio nuts.

This recipe is adapted from Simplyquinoa.

So, here it goes. For some 10-12 balls, you will need:

  • ¾ cup cashews
  • ¼ cup raw pistachios
  • 100 grams date paste
  • 2 tablespoons almond butter (or another nut butter)
  • 2 teaspoons matcha powder
  • 1 teaspoon vanilla powder
Put all the ingredients in your food processor and blend until finely ground and all sticking together like a dough. Then, form small balls.
Et voilà! I love how easy this is!
