Citrusy chia balls

Peeps, it’s been a while, right? I make energy balls very often, all sorts of variations of spices and dried fruits and nuts, but I have not posted a new recipe in a while. What kind of a mania is this if regularity is lacking – you may ask! And you will be right.

So here I am, catching up. These CC – citrusy chia – balls are a real freshness for your taste buds, which is just about right for the long-awaited warm weather that we are enjoying in Paris right now. They are from a book I have, Green Snacking by Fern Green, and I post them here cos I want to remake this recipe as often as possible.

So, for about 12 balls, you will need:

  • 150 grams cashew nuts
  • 45 grams oat flakes
  • 35 grams shredded coconut
  • 200 grams date paste
  • 2 tablespoons chia seeds
  • finely grated zest from 1 lemon

Mix the nuts, oat flakes and coconut all together in a food processor, until powdery. Add the date paste, 60 ml warm water, the chia seeds and the lemon zest, and mix it all together to homogenize the mixture. Then just make small balls with your hands and refrigerate them a bit before enjoying.

Et voilà! Watch out peeps, a breezy yumminess is about to hit you!
